Wireshark-users: Re: [Wireshark-users] why is it so difficult to stop capturing with wireshark 1.
I've seen this under high loads as well. In some instances I've had to be ready to pull the network cable and then stopping it. Applying a capture filter does help if you can only include certain traffic.
