Well, perhaps we should add a new item to the FAQ:

	Q: Does Ethereal work on Windows CE-based machines such as
	Pocket PCs?

	A: No:

	   o There is not yet a version of WinPcap that supports
	     Windows CE, so Ethereal wouldn't be able to capture
	     packets;

	   o GTK+ for Windows might not work on Windows CE, in which
	     case Ethereal wouldn't be able to have a GUI;

	   o the user interface for Ethereal is one that's appropriate
	     for machines with a "full-sized" screen - the interface
	     appropriate to a handheld machine might be considerably
	     different for one appropriate to a desktop or notebook
	     computer.

There *does* exist a sniffer that's intended for handhelds, Mognet:

although, given the lack of a WinPcap for Windows CE, the lack of any
known way in NDIS to do "monitor mode" on wireless cards, and the
possible lack of jpcap for Win32, it probably requires your handheld to
be running Linux.
