"Automatic scrolling in live capture" has no effect unless you've
selected "Update list of packets in real time"; do you mean that you
want automatic scrolling to be on by default *if* you override, in the
"Capture Settings" dialog box popped up when you select "Start" from the
"Capture" menu, the default "No real-time update of list of packets"
setting?

In Ethereal 0.9.2, yes, you can.

In Ethereal 0.9.2:
1) Select "Preferences" from the "Edit" menu.
2) Select "Capture" from the pane on the left.
3) Turn "Capture packets in promiscuous mode" on if it's not
already on (it's on by default).
4) Turn "Update list of packets in real time" off if it's not
already off (it's off by default).
5) Turn "Automatic scrolling in live capture" on (it's not the
default).
6) Select "Name resolution" from the pane on the left.
7) Turn off all three options.
8) Press the "Save" button".
9) Press the "OK" button.
