Hey Barry,

I know of one VoIP stat command:

example: tshark -r <file name> -z sip,stat

This will tell you the number of occurrences of each SIP method and each SIP status code. In addition you can add a filter to the end.

example: tshark -r <input file name> -z sip,stat,ip.addr==192.168.10.12
