Try something like the following with env when you kick off your
wireshark process (assuming you're using a Unix-like OS):

stampy[~] 162v>: date
Thu Dec 18 16:32:49 EST 2008
stampy[~] 163v>: env TZ=Australia/Victoria date
Thu Dec 18 16:32:51 EST 2008
stampy[~] 164v>: env TZ=GMT date
Thu Dec 18 05:32:52 GMT 2008
