you need to define the DISPLAY variable to point to your X11 display. the easiest is to start wireshark in a xterm window. if you "su" to root in this xterm, the DISPLAY has to be set again maybe. export DISPLAY=127.0.0.1:0.0 (in bash, sh and the like) should do.
