Unfortunately, no.  Our RPM packaging stuff isn't oriented towards building *Shark RPMs in the fashion that some Linux distributions do, with a "here's the non-GUI" stuff RPM and a separate "here's the additional GUI stuff" RPM.  Perhaps it should be.
