So while I'm familiar with Linux, and can find my way around somewhat via
command line, is there a specific command you'd like me to run so I can better
assist?

To put it another way, I don't know how to run a capture from a command line
using dumpcap.

Should I also update libpcap (even though I downloaded the latest and greatest
of everything earlier today prior to running my first capture)?
