Regarding the first point:
Maybe you'd like to take a look at what I did in packet-wassp.c with
ext_value_string? I'm not convinced that I found the best possible solution,
but I still consider it "good enough" (the best solution would add the type
value to the struct and generate the hf elements from there as well).

Regarding the second point:
It'd be much better to create a small perl program that takes the tshark output
as input, processes each line as you want and then send it as a syslog message
- it will probably take me 10 to 20 minutes to write a small example, so if
nobody beats me to it and I don't forget it I might do that some time next
week.
