By "add any new protocol", if you mean adding a protocol filter, then under Capture -> Options -> Capture Filter, you can specify the filter you want such as "icmp" or "tcp". You can also use complex filters such as "udp && src host
a.b.c.d" (to capture udp packets coming from source IP a.b.c.d).

This can be set in 2 ways-
1] Once the capture is done, you can save it from File -> Save
2] Before capturing, you can set the file from Capture -> Options -> Capture File(s) -> File.
