Yes you can.
First capture all then decode them as RTP. For that you need to know the UDP port number of the RTP.
Filter the RTP packets and save them. If the dialog is done by G.711(PCM) than Cooledit can convert them to voice.
I do not remember if you need to filter in one direction or both can be used when recreatiing the voice.Try it.
For converting other decoder voice such as G.729 you will need other specialized Voice software to do the conversion.
