We've deployed several machines at client sites using this technique.
The Unix version of VNC comes with its own X server which creates a
virtual display in memory. Adding on a lightweight window manager gives
you a nice environment for running Ethereal.
We get around the network traffic problem by deploying machines with two
or more NICs.
