Select "Coloring Rules" from the "View" menu, and add a coloring rule for your protocol - choose the colors (foreground and background) that you want.

b) I want to change the color of packets marked (pinfo->fd->flags.marked) since it's black

Select "Preferences" from the "Edit" menu, open the "User Interface" list if it's not opened, and select "Colors". Then choose the color you want for "Marked packet foreground" and/or "Marked packet background".
