What do you mean by "is not able [to] display the packets on [the] GUI"?
Do you mean that the packets don't show up in the list of packets? Or do you mean that Ethereal doesn't dissect them correctly when you click on them in the list of packets?
I have no problem with packets generated by "ping -s 500", running on the machine on which Ethereal is running, on OS X with the current version of Ethereal from the Subversion tree; they are shown in the packet list and are dissected correctly.
