An example that's probably somewhat close to what you're trying to do would be packet-tds.c. "dissect_tds_tcp_heur()" does heuristic checks to see if the traffic looks like Netlib traffic and, if it does, checks to see if there's already a conversation, creates one if there isn't, and makes the TDS dissector that conversation dissector.
