Well, that depends on what you consider a "tutorial".  The only
developer documentation that comes with Ethereal is in the various
README files in the "doc" directory, such as "README.developer";
however, they are not exactly a *detailed* tutorial with lots of
examples, nor are they a complete tutorial.

I don't know, and I suspect nobody knows the complete answer.  There is
no central list of protocol dissectors being developed; development of
protocols isn't managed by a central Ethereal developer group,
dissectors are written and contributed when individuals need a dissector
or want to write a dissector, and decide to contribute it.  Individuals
on the list might know what they're working on, but they won't
necessarily know what others are working on - even members of the core
development team doesn't know that, as far as I know, unless somebody's
sent a message saying they're working on a particular dissector *and*
they happen to remember that message.
