Yes, we do that (dealing with virtual representation of data, not just
the physical layout of the packet) in a number of places in Ethereal.

Look at, for example, reassembled fragmented IPv4/IPv6/CLNP packets, or
reassembled PDUs that take more than one TCP segment, or reassembled
RPC-over-TCP or NDMP message built from multiple fragments, or
reassembled SMB transaction or DCE RPC messages.
