I appear to be having a simiar thing with RTP.  
I tried looking at the output of openh323 between 
two computers and ethereal did not identify the RTP 
streams (UDP port 5000 I think).

Sounds like a good idea.  Also, what about right clicking on
the data part of an unrecognized packet and having the option of
trying to apply a protocol to it????
