"tcpview" (a version of which I'd hacked up a fair bit, those changes
being the inspiration for much of the stuff I've added to Ethereal)
saves live captures to a temporary file, and then reads in the temporary
file.  Microsoft's Network Monitor also saves live captures somewhere
anonymous, so you don't have to specify a file name when you do a
capture.

Both of them let you save an existing capture to a file.

I often don't know, when doing a capture, whether I'll want to save it
or not; I may find out the problem just by looking at the live capture. 
It's inconvenient to require that you enter a file name when doing a
capture.
